Homemade Crumpets

If you've never tried crumpets before I urge you to try out this simple recipe and taste them for yourself. They are great with honey, jam, or a particular favorite of my family Marmite. I like to eat them fresh off the griddle just plain. You can make them with regular flour, or you can also make them with wheat flour, oat flour etc. Very versatile.

So, things you'll need are:


  • 225g (~1 3/4 cup) Flour (I use 1/2 bread flour and 1/2 all purpose)
  • 150ml (~3/4 cup) warm milk about 110 degrees (what ever type is on hand, I use 2%)
  • 150ml (~3/4 cup) warm water
  • Instant Yeast or Rapid Rise 1 heaped tsp
  • 1 tsp salt
  • 1 egg
  • 1 to 2 tbls butter melted (I used salted but I don' think it matters)
  • griddle to cook them on
  • crumpet rings (or biscuit rings, something to shape them with)



Directions:

In a large bowl (I use kitchen aid mixer bowl) mix milk and water together, add butter. Add in salt. Add the egg and beat until combined. Add in yeast and flour. Mixture should look like pancake batter not dough. If too doughy add small amounts of water to get the right consistency. Likewise if too liquidity add small amounts of flour. Cover bowl with a damp towel, and let rise for 1.5 hours. (If you live in a place like phoenix just set the bowl outside in the sun!) After 1.5 hours mixture should be a little thicker and bubbly.

Heat griddle (or pan if using stove) to ~250. Grease pan, and grease rings. Place rings on griddle and pour about 1/3 cup batter into ring (the amount will depend on what size ring you use).

Don't turn over until crumpet is cooked almost through. Bottom should be a golden brown. Turn and cook just a few minutes to brown the top. Continue until all cooked. Don't forget to grease the rings after each use.

Makes about 12 3/4" thick crumpets. Enjoy!
